  • 500 grams chicken tenderloins
  • red onions
  • japanese plum wine (or white rum)
  • 2 avocados (ripe)
  • 300 millilitres thin cream
  • pepper (to taste)
  • salt (to taste)
  • penne pasta
  • 17⅔ ounces chicken tenderloins

Method

  • Cook penne pasta
  • peel, and halve lengthwise the red onion and slice thinly, gently brown in olive oil
  • cut the chicken tenderloins into chunks, cook with onion for 2-3 mins
  • add a sploosh of the wine or rum, cook for a further 1 minute, turn heat down
  • add cream, salt & pepper
  • then lastly add avocado, careful not to boil
