  • 1 turkey (8-26 lbs, stuffed according to the recipe of your choice - no need to adjust cooking times for stuffed bird)
  • 1 pound unsalted butter

Method

  • Preheat the oven to 375F
  • Prepare stuffing, stuff and truss your turkey according to your traditional method. Set aside
  • Take a large unprinted Kraft paper bag and grease it generously in and outside with butter.
  • Place the stuffed turkey in the bag.
  • Seal the bag and set it on a wire rack in a roasting tin.
  • Pour 2-1/2 cups of water in the pan.
  • Cook as follows: 8- 10 lbs. 2 1/4 hours 12 - 14 lbs. 2 3/4 - 3 hours 16 - 18 lbs 3 1/2 - 4 hours 20 - 22 lbs. 4 1/2 - 5 hours 24 - 26 lbs. 5 1/2 - 6 hours NO BASTING REQUIRED.
  • Remove cooked turkey from oven. Peel away and discard paper bag. Remove stuffing from cavity and prepare turkey gravy as usual. Allow turkey to rest for 15 minutes before carving.
