A Simple Spicy Tomato Sauce

Introduction

This is a really fresh, zingy sauce. You can adjust the amount of chilli to your taste, but I like it quite spicy. Inspired by the original Bill Granger recipe, I serve this with trout or salmon that has been grilled or pan fried to get a crispy skin. I love it with tagliatelle, tossed with creme fraiche (helpful if the sauce is really spicy!) and baby spinach.

Ingredients

Serves: 2-3

Metric Cups
  • 1 teaspoon olive oil
  • 1 large red chilli (finely sliced into rings)
  • 5 centimetres fresh ginger (grated or finely chopped)
  • 3 cloves garlic (finely sliced)
  • 400 grams tomatoes (fresh and diced)
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon olive oil
  • 1 large red chile (finely sliced into rings)
  • 1⅞ inches fresh gingerroot (grated or finely chopped)
  • 3 cloves garlic (finely sliced)
  • 14⅛ ounces tomatoes (fresh and diced)
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar

Method

  • Add the oil to a pan over a medium heat.
  • Add the chilli, ginger and garlic to the pan and fry for 1-2 minutes, until fragrant. You don't want to colour the spices, just take the raw edge off them.
  • Add the chopped tomatoes to the pan.
  • Add the soy sauce and sugar and cook down for 5-7 minutes. You want a fresh, light sauce with all the ingredients still identifiable, not a mushy mess.
