Megan's Pea Soup

Introduction

This is a good "beginner's" soup. You can also leave out the ham and hambone for a vegetarian version.

Ingredients

Serves: 8

  • ¼ litre water
  • 1 ham hocks
  • 625 millilitres yellow split peas
  • 250 millilitres chopped ham
  • 1 stick finely diced celery
  • 1 large finely diced carrot
  • 1 finely diced onion
  • ½ teaspoon dried thyme
  • 1 pinch of cayenne pepper
  • 1 bay leaf

  • Combine all ingredients in a large pot and boil hard for 20 to 30 minutes, then simmer for an hour or two, until the peas are nice and soft.
  • Remove hambone and serve.
  • If desired, sieve or puree soup for a smooth texture.
  • Salt and pepper to taste.
