Great diced with a drink or sliced for a picnic or a lazy summer lunch. Tastes better on the same day, though. You can also keep the basic cake mix and change the other ingredients.

Ingredients
Serves: 6
For the Base Cake Mix
- 250 grams plain flour
- baking powder (half a sachet - approximately a teaspoon and a half)
- 4 eggs
- 100 millilitres milk (or cream or white wine - any liquid really)
- 100 millilitres oil (olive or half olive oil, half vegetable oil)
For the Fancy Ingredients
- 2 balls mozzarella (diced)
- 8 sundried tomatoes (in oil - patted in a piece of kitchen roll)
- 1 teaspoon herbs de provence (or 200g pitted green olives)
- 150 grams bacon lardons (fried)
- 150 grams Cheddar cheese (grated - or 200g diced feta cheese)
- 2 teaspoons dried basil

- 4 eggs
- 4 fluid ounces milk (or cream or white wine - any liquid really)
- 4 fluid ounces oil (olive or half olive oil, half vegetable oil)
For the Fancy Ingredients
- 2 balls mozzarella (diced)
- 8 sundried tomatoes (in oil - patted in a piece of kitchen roll)
- 1 teaspoon herbs de provence (or 200g pitted green olives)
- 5⅓ ounces bacon lardons (fried)
- 5⅓ ounces Cheddar cheese (grated - or 200g diced feta cheese)
- 2 teaspoons dried basil
