Introduction

Great diced with a drink or sliced for a picnic or a lazy summer lunch. Tastes better on the same day, though. You can also keep the basic cake mix and change the other ingredients.

Ingredients

Serves: 6

Metric Cups

For the Base Cake Mix

  • 250 grams plain flour
  • baking powder (half a sachet - approximately a teaspoon and a half)
  • 4 eggs
  • 100 millilitres milk (or cream or white wine - any liquid really)
  • 100 millilitres oil (olive or half olive oil, half vegetable oil)

For the Fancy Ingredients

  • 2 balls mozzarella (diced)
  • 8 sundried tomatoes (in oil - patted in a piece of kitchen roll)
  • 1 teaspoon herbs de provence (or 200g pitted green olives)
  • 150 grams bacon lardons (fried)
  • 150 grams Cheddar cheese (grated - or 200g diced feta cheese)
  • 2 teaspoons dried basil
