Metric Cups
  • 125 grams full fat soft goat's cheese
  • 1 tablespoon fresh parsley (chopped)
  • 1 tablespoon chives (chopped)
  • 2 tablespoons olive oil
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 4 chicken breasts (with skin)
  • 1 tablespoon butter
  • 4⅖ ounces full fat soft goat's cheese
  • 1 tablespoon fresh parsley (chopped)
  • 1 tablespoon chives (chopped)
  • 2 tablespoons olive oil
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 4 chicken breasts (with skin)
  • 1 tablespoon butter

Method

  • Mix together the goat cheese, parsley, chives, 1 Tbsp. olive oil and seasoning.
  • Cut a pocket in each chicken breast and fill with the stuffing, securing the chicken breast with a wooden skewer if necessary.
  • In a pan heat the rest of the olive oil together with the butter and when its hot put the chicken breasts in skin side down.
  • Cook for 10 minutes until golden brown then turn the breasts over and cook for another 10 minutes.
  • Alternately the breasts can be baked in a pre-heated 200ºC oven for 20 minutes.
