Metric Cups
  • 1 tablespoon oil
  • 3 spring onions (chopped)
  • 1 onion (chopped)
  • 1 clove garlic (chopped)
  • 2 chicken breasts (cut into strips)
  • 1 tablespoon korma curry paste
  • 150 millilitres chicken stock
  • 75 grams baby sweetcorn (chopped)
  • 100 grams beansprouts
  • 125 grams egg noodles
  • 1 tablespoon oil
  • 3 scallions (chopped)
  • 1 onion (chopped)
  • 1 clove garlic (chopped)
  • 2 chicken breasts (cut into strips)
  • 1 tablespoon korma curry paste
  • 5 fluid ounces chicken broth
  • 2⅔ ounces baby sweetcorn (chopped)
  • 3½ ounces bean sprouts
  • 4⅖ ounces egg noodles

  • Heat oil in a wok, stir fry spring onions, onions and garlic for 2 mins.
  • Add chicken, stir fry for 5 mins, add sweetcorn and beansprouts, fry for 3 more mins.
  • Add curry paste, cook for 30 seconds.
  • Add chicken stock and coconut milk cook for 5 mins over a low heat.
  • Finally stir in noodles, cook for 2-3 mins, season and serve.
