Barberries & Rice (Zereshk Polo)

Introduction

Barberries are rare, tasteful, and healthy. They're very tiny red berries that are sold in dried form. Because these berries are tart, they need a little sugar to balance the taste.

Ingredients

Serves: 4-6 people

  • 1½ cups dried barberries (rinsed)
  • 3 cups basmati rice
  • 1 pinch of saffron
  • 4 teaspoons superfine sugar
  • 1 salt
  • 1 pepper
  • 4 tablespoons vegetable oil

Method

  • Cook rice in a rice steamer and set aside.
  • Add vegetable oil to a non stick saute pan on medium heat, saute barberries for 5 minutes.
  • Add salt, pepper, sugar, and saffron.
  • Before serving, fork through the rice and add the barberries over the rice.
  • Serve with roasted chicken and a tossed salad.

    This dish is called Zereshk Polo. You can purchase barberries or Zereshk in any International food store.
