Introduction

It's a huge crowd pleaser and a great filling to sandwiches.

Ingredients

Serves: 16-20

  • 8 large baking potatoes
  • 16 ounces peas (sweet, drained)
  • 8 ounces persian pickles (or small sandwich pickles, diced)
  • salt (to taste)
  • pepper (to taste)
  • 2 teaspoons lime juice (use bottled lime juice or squeeze fresh limes)
  • 6 tablespoons mayonnaise

Method

  • In a large bowl, mix all ingredients together until nicely mashed and blended.
  • Serve in a beautiful crystal container and smooth out the surface with the back of a spoon.
  • Serve over a large layer of lettuce leaves on chilled ice.
  • Next to the Salad Olivieh, arrange platters or baskets of bread slices for sandwiching; I suggest crusty French sour dough or large pita.
  • Additional Information

    Scatter lime slices, lemon slices, parsley, and radishes around the Salad Olivieh as garnish. For theme parties, draw out favorite characters on the smooth surface of this salad using slices or shavings made of colorful vegetables.
