Strawberry Fairy Cup Cakes

Introduction

I love picking strawberries at a farm nearby, when they're in season; it leaves a lasting memory for me and my kids.

Ingredients

  • 1 packet vanilla cake mix
  • 2 cups heavy cream
  • 1 cup confectioners' sugar
  • pink food colouring
  • ⅘ pint fresh strawberries
  • rose water

Method

  • Let cup cakes cool.
  • In an electric stand mixer, whip the heavy cream and powdered sugar until thick and fluffy, about 4-5 minutes. Add pink food coloring and rose water. Gently fold in.
  • Frost each cup cake with a small flat spatula. Smooth out the top surface of each cup cake and place a single strawberry on each cake.
  • Place them on pretty platters, and decorate the edges of each platter or pedestal with edible flowers and leaves.
  • Serve with an assortment of cookies and fresh black berries, raspberries, small watermelon slices, and apple slices for a delightful children's party.
