Ingredients

Serves: serves about 10 slices

Metric Cups

For the Dry Ingredients

  • 300 grams plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 200 grams raisins

For the Wet Ingredients

  • 150 grams butter Melted
  • 150 grams soft brown sugar
  • 2 eggs
  • 4 medium apples Grated

For the Dry Ingredients

  • 10⅗ ounces all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 7 ounces raisins

For the Wet Ingredients

  • 5⅓ ounces butter Melted
  • 5⅓ ounces soft brown sugar
  • 2 eggs
  • 4 medium apples Grated

Method

  • This is a wet/dry cake method which is that you put all the wet ingredients in one bowl and all the dry ingredients in another bowl, then mix them together.
  • The easiest way to grate the apples is take an apple whole a grate skin and all until you reach near the pips then turn it around until you only have the middle bit left.
  • Mix together by hand so there is no flour lumps and put into the loaf tin. Bake for 45 to 60 mins.
  • A skewer should come out clean when the cake is cooked through.

    • Baked this last night and I was a bit disappointed. I think the recipe needs a little more fluid in it as the cake mixture was rather stiff. I baked it at 160-170 degrees fan for 45 minutes and added on an extra 10 minutes. The bake was a bit too crumbly and heavy although the flavours were all good. Just to add that I am an experienced home-baker but I'll be tweaking this recipe some before I try it again.

    • What temperature ?????? I am guessing at gas mark 3-4 but an exact temperature would be appreciated please :)
