Quick Pesto Bread

Introduction

a quick bread (takes 5 minutes to mix up) that is fragrant and great to serve at a braai or a dinner party.

Ingredients

Serves: 4

  • 2½ cups flour
  • 2 tablespoons baking powder
  • 2 eggs
  • 1 cup oil
  • 1 cup milk
  • 3 tablespoons pesto (basil)
  • 3 tablespoons sun-dried tomato paste (or pesto)

  • Sift flour and baking powder and add salt and pepper to taste
  • Whisk eggs, oil and milk Mix the 2 together lightly but thoroughly and split into 2 bowls
  • In the one add pesto In the other add sun dried tomato paste Fold the flavours in lightly, aiming for a rippled effect and then layer in a standard bread loaf pan. (I lightly butter, flour and then place baking parchment or grease proof paper in the bottom)
  • Grate some parmesan on top and bake for 1 hour 10 minutes.
