Easy Carrot Cake

Introduction

This carrot cake is very easy to make and it is delicious too. It can be covered whith melted dark chocolate. I bake this carrot cake every week for my children and friends even when we were living in England. It´s a flavour from Brazil! Try whith a cup of coffee!

Ingredients

  • 2 medium carrots
  • 500 superfine sugar
  • 250 vegetable oil
  • 4 medium eggs
  • 500 flour
  • 1 tablespoon baking powder

Method

  • Pre heat oven to 230C
  • Grease and dust with flour a 21 cm spring form tin
  • Put carrots, sugar, oil and eggs in a liquidizer for a few minutes to make a thin cream
  • In the liquidizer or in a large bowl add 1 tablespoon baking powder plus 2 cups flour
  • Pour in the greased tin and bake till it gets golden brown and a skewer comes out clean
  • Serve with melted chocolate
  • If it gets too dry on the first time you bake try to put less flour next time
