Vegan Maple Syrup Cookies

Introduction

These are so easy to make, and the rich maple flavour makes them perfect treats for autumn.

Ingredients

Serves: 6-8

  • 4 ounces softened margarine (or equal amount of vegetable oil)
  • 4 ounces soft brown sugar
  • 2 tablespoons apple sauce
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 11 ounces flour
  • 1 pinch of salt

Method

  • Preheat the oven to 175 C.
  • Cream the sugar with the margarine (you can use butter for a richer flavour, though the veganness is gone then), then add the applesauce, vanilla and maple syrup and mix well.
  • Sift together the flour, baking soda and salt. Add the dry ingredients to the wet ingredients and stir until everything is combined.
  • Take little balls of dough and put them on your greased cookie sheet, about 2 inches apart.
  • You don't have to flatten them.
  • Bake for about 8-10 minutes and let them cool on a wire rack.
