Ingredients

Metric Cups
  • 2 kilograms kairee (raw mango)
  • 1 teaspoon sugar
  • 1 teaspoon salt

  • 2 saffron strands
  • 4⅖ pounds kairee (raw mango)

Method

  • Pressure cooker the raw mangoes on a 3-4 whistles. If you dont have a pressure cooker, you can heat it in double boiler. Just ensure that mango is cooked till inside.
  • Once cooked, peel the skin and remove the seed. Now in a large bowl, mash the pulp of mango. Now measure the pulp, say if it comes to 2 cups, exactly double the amount of sugar is required. So for 2 cups of pulp, you add 4 cups of sugar. Keep it aside for an hour so. this makes the flavours come out nicely, tangy & at the same time sweet.
  • Now add salt, cardomom powder and safron. Mix well and blend it in a mixer to form smooth paste. Your concentrate for the drink is ready, you can store this for 3-4 weeks in the refrigerator.
  • Every time you need to make drink out of this, just add 3 teaspoon of this for a glass of chilled water. Its easy!

    I always keep a ready paste consisting mint & salt in the refrigerator. So whenever I have to make a glass of this drink, I just add few drops of this paste along with concentrate. It is minty, tangy & sweet in flavour.
