Vada Pav (Indian Burger)

This is the most common food you'll find in Mumbai and it's famous as the Indian Burger. Well I admit it's high cholesterol but at times I give up on this.


Serves: 4-5

For the Filling

  • 3 large potatoes (boiled)
  • 1 finely chopped onion
  • 3 green chiles
  • 1 piece of fresh gingerroot
  • 5 cloves finely chopped garlic
  • cilantro
  • 1 teaspoon turmeric
  • 1 pinch of asafoetida salt (to taste)
  • gram vegetable oil (for frying)

For the Coating

  • 2½ cups gram flour (besan)
  • 1 teaspoon turmeric
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 1½ cups water
  • bread (fresh bakery bread - to serve)

  • Grate the boiled potatoes.
  • make a fine paste of ginger, garlic and chillies.
  • In a pan, add 1 teaspoon of vegetable oil, add the ginger-garlic-chilli paste.
  • Once it starts crackling, add turmeric & asafoetida and the chopped onions.
  • Mix well and cover with the lid for few minutes so that the onions become soft & pinkish.
  • Now add the corriander and grated potatoes. Add salt according to taste and mix well.
  • Let it cook for few minutes on low flame with lid on it.
  • Remove it from heat and keep it aside so that it comes to room temp.
  • In a frying pan take sufficient oil for frying and keep it on a low flame for heating it.
  • In the mean time take the gram flour and add turmeric, red chilli powder, cumin powder & salt. Mix well and start pouring in the water.
  • Remember that the batter should not be very running, it should be thick (similar to the cake batter).
  • Make small balls of the potato mixture and dip them into this bater and deep fry.
  • Additional Information

    This is very filling and makes approx. 10-12 Vadas. Can be eaten as snack. You'll find the gram flour in any Indian super markets.
