Ingredients

Serves: 4

Metric Cups
  • 2 tablespoons olive oil
  • 1 onion (chopped)
  • 2 cloves garlic (crushed)
  • 300 grams chorizo (sliced)
  • ½ teaspoon dried chilli flakes
  • 250 millilitres red lentils (green, brown or yellow lentil varieties are great in soups, but red lentils take the least time to cook)
  • 800 grams chopped tomatoes
  • 1000 millilitres chicken stock
  • sea salt
  • cracked black pepper
  • 2 tablespoons olive oil

  • 10⅗ ounces chorizo (sliced)
  • ½ teaspoon red pepper flakes
  • 9 fluid ounces red lentils (green, brown or yellow lentil varieties are great in soups, but red lentils take the least time to cook)
  • 28¼ ounces diced tomatoes
  • 35 fluid ounces chicken broth
  • sea salt
  • cracked black pepper

Method

  • Heat a large saucepan over medium heat. Add the oil, onion, garlic, chorizo and chilli and cook for 8-10 minutes or until the onion is tender and the chorizo is golden.
  • Add the lentils, tomatoes , stock, salt and pepper, bring to boil and cook for 15 minutes or until the lentils are tender.
  • Serve with bread. Serves 4

    • I swapped the chicken stock for vegetable stock and replaced the chorizo with vegetarian chorizo - it was yummy!
