Eleni's Greek Chicken Pork and Potatoes

Preheat oven to 200° C. Put meat & potatoes into a roasting tin in one layer. Season everything well and sprinkle liberally with olive oil and lemon juice. Add about ½ a cup of water to the tin. Cook in the oven for 1-1½ hours.
Introduction
This is a standard Greek dish, usually made with either chicken or pork. When Eleni cooked it for me she used both!

- chicken pieces (1 per person)
- potatoes (1 per person)
- 1 lemon (juiced)
- kalamata olives
- olive oil
- salt
- freshly ground pepper
