Winter Warmer Soup

Place all ingredients into a large saucepan and bring to the boil. Skim the top if necessary. Cover and simmer for 20-25 mins, or until vegetables are tender. Allow soup to cool slightly and remove the bay leaf. Puree the soup. Reheat the soup gently, season with lots of black pepper, then serve. A garnish of chopped herbs is nice, or my husband likes to stir in some chopped bacon pieces that have been grilled until nice and crispy. Enjoy.

- 1 sweet potato (sliced)
- 2 large carrots (sliced)
- 1 stick celery (sliced)
- 1 clove garlic (finely chopped)

- 1⅕ litres water
- 1 vegetable stock
- 3 teaspoons bouillon powder (low salt if possible)
- ½ teaspoon cayenne pepper (or chilli powder)
