Metric Cups

For the Fish

  • 4 halibut fillets (or red snapper)

For the Mango/Banana Salsa

  • 1 clove garlic (crushed and chopped)
  • 1 onion (chopped)
  • 1 pinch of red pepper flakes (optional)
  • 1 mango (cut into cubes)
  • 1 banana Cut into thin discs)
  • ¼ kilogram shrimp (shelled and deveined)
  • 125 millilitres chicken stock (or fish stock)
  • 1 teaspoon apricot jam
  • 1 handful fresh mint (or coriander - chopped)
  • 1 pinch of salt
  • 1 pinch of pepper

  • 4 fluid ounces chicken broth (or fish stock)
  • 1 teaspoon apricot jam
  • 1 handful fresh mint (or coriander - chopped)
  • 1 pinch of salt
  • 1 pinch of pepper

Method

  • Season fish with salt and pepper, dredge with flour and fry over medium heat into a deep golden brown color. Arrange nicely on a serving platter. Keep warm.
  • Clear the same pan with browned bits of flour, return to heat and add a dab of butter. Saute garlic and onion until softened. If you're in for some heat, you may add a pinch of red pepper flakes.
  • Add shrimps. Stir fry for a few seconds and then de-glaze the pan with stock. Cook for 3-4 minutes, and in the final minute add cubed mango, banana and mix in apricot or peach jam.
  • Make a final check on the seasoning and then serve over fried fish fillets with a showering of chopped mint or coriander leaves. Slivers of pan-roasted almonds or cashew nuts would be lovely too. Enjoy.
