Roast Chicken D-Lite

Introduction

This is the easiest treat to make when I have friends coming for dinner.

Ingredients

Serves: 2-4

For the Roast Chicken

  • chicken thighs
  • chicken legs
  • 1 lemon (juice and rind of)
  • 1 bay leaf
  • extra virgin olive oil
  • chicken seasoning (or a mixture of sweet paprika powder and chopped thyme and rosemary)
  • potatoes (marble, whole)
  • button mushrooms (whole)
  • salt
  • pepper

For the Garnish

  • lemons (sliced)
  • chives

Method

  • Clean and pat dry chicken pieces. Place in a medium to large rectangular baking dish with all of the ingredients.
  • Combine everything together, massaging the chicken pieces (and the potatoes and mushrooms) with the nice herbs and spices.
  • Arrange the chicken pieces on top of the potatoes and mushrooms scattered in the bottom of the pan like a rack, and then bake your whole creation for 45 minutes to an hour at 180 degrees Celsius.
  • Baste the chicken pieces with the drippings regularly during the cooking process to prevent them from drying out.
  • And just before serving, carefully bathe the cooked chicken pieces with the same lovely drippings. Scatter sliced lemon pieces on top and rain down some 1 - 2 inch cut chives. Enjoy.
