Introduction

This is a Christmas Cookie must-have at my house. They are almost like little teacakes, not too sweet and perfect along with some tea or coffee.

Ingredients

Serves: 6-8

  • 125 millilitres softened unsalted butter
  • 113 grams softened cream cheese
  • 125 millilitres sifted confectioners' sugar
  • 1 medium egg yolk
  • 313 millilitres sifted all-purpose flour
  • 125 millilitres jam (any flavour)
  • 250 millilitres confectioners' sugar

  • Heat your oven to 350F
  • In the bowl of your mixer combine the butter and cream cheese on low speed until well blended. Add the sugar and egg yolk and mix until fluffy.
  • Mix in the sifted flour and mix until combined. Do not over mix.
  • Scoop out 1" pieces of the dough and roll into balls. Place on a parchment lined, or ungreased, cookie sheet. Press your thumb into the center of each cookie and fill with 1/2 teaspoon of jam.
  • Bake for 12-15 min, or until the bottom is golden brown. Allow the cookies to cool completely and roll the edges in powdered sugar, or sift the sugar over the top.
  • Devour!
