I love mango when it is in season, and in the summer I love this fruity salsa on spicy meat. It is best if eaten the next day, but if you need it right away it will still be very tasty.
- 1 mango (peeled and diced)
- 125 cucumber (peeled, seeded and diced)
- 1 tablespoon finely chopped jalapeno peppers
- 63 diced scallions
- 1 tablespoon lime juice
- 1 tablespoon finely chopped) cilantro

You can add a diced avocado to this salsa just before serving for a creamy twist. I do this frequently in place of a proper Guacamole. Fresh tomato is also a nice addition, if you like that sort of thing.
