Introduction

This is the recipe my mother always used and I love them for breakfast served warm with butter and strawberry jam.

Ingredients

Serves: 8-9

  • 313 millilitres flour
  • ⅕ teaspoon salt
  • 83 millilitres currants
  • 1 teaspoon baking powder
  • 2 tablespoons butter
  • 125 millilitres milk
  • oil (for frying)

Method

  • Combine flour, baking powder and salt. Cut in butter until mix resembles coarse meal.
  • Stir in currants. Add just enough milk, a little at a time, to make a firm dough that is like a pie crust.
  • Roll out onto a well-floured surface to 1/4 inch thickness. Cut into rounds about 2 1/2 inches in diameter.
  • Coat the bottom of a heavy frying pan with oil. On a low heat, fry cakes 4-5 minutes on each side until nicely browned.
  • Serve piping hot. Makes 8-9.
