Ingredients

Serves: 3-4

Metric Cups
  • pepperoni sausage (cut into semicircles)
  • red pepper (chopped)
  • green beans (halved)
  • potato (cubed)
  • olive oil
  • oregano
  • carrot (sliced)
  • fresh rosemary

Method

  • Chop all vegetables and place in a bowl, pour some olive oil with rosemary and oregano.
  • I t is easier to use your hands for the next part: Toss everything around so it all gets a good coat of oil and herbs.
  • P lace in a baking tray which has a little more oil to prevent any sticking.
  • Cook until potatoes are golden brown and cooked through.
