Metric Cups
  • 1 vegan butter
  • 1 soya milk
  • 1 salt
  • 1 pepper
  • 1 yeast flakes (for variation)
  • 1 vegetable stock cube (for variation)
  • 1 capers (for variation)
  • 1 vegan butter

Method

Basic Vegetarian "Cheese" Sauce is a community recipe submitted by Vegelicious and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Melt a quantity of butter (depending on how much sauce you require. The more butter, the more sauce you will create).
  • Once melted, add equal amount of plain flour and stir rapidly with fork until mixed.
  • Let bubble on low to medium heat for 1 minute (must watch for the whole minute) stir if necessary.
  • Remove from heat.
  • Add a small amount of milk and stir until the milk combines with the flour/butter mixture. Season.
  • Add another, slightly larger amount of milk and repeat. Add another amount of liquid once preceding amount has been combined.
  • Keep doing this until you have your desired consistency.
  • There is no need to return the pan to the heat. Adding the milk in this way - the sauce thickens all on its own.

    For luxurious and tasty alternatives: At the adding flour stage, add some nutritional yeast flakes. These create an even cheesier taste. When adding milk, you can dissolve a stock cube in some boiling water and make up a half and half liquid mixture. Add capers and a little of their salty juice in the liquid stage.
