Sticky Orange Cake

Introduction

a lovely sticky cake ideal to serve as a dessert!

Ingredients

Serves: 6

For the Cake

  • 188 butter
  • 1 tablespoon butter (extra)
  • 375 superfine sugar
  • 1½ tablespoons grated orange zest
  • 4 large eggs
  • 125 plain yogurt
  • 3 tablespoons orange juice
  • 500 all-purpose flour
  • ½ teaspoon baking soda

For the Sauce

  • 250 fresh orange juice
  • 3 tablespoons lemon juice
  • ½ tablespoon grated lemon zest
  • ½ tablespoon grated orange zest
  • 125 sugar

Method

  • Preheat oven to 180c(350f). spray a 20cm ring tin, or butter well. You can base line the tin as well.
  • Cream the butter and c. Sugar until fluffy. Add orange rind and mix well. Add eggs 1 at a time, beating well after each one.
  • Mix yogurt and orange juice and add to mixture. Blend well and place in prepared ring tin.
  • Bake for about 40 mins. Stand cake in tin for 5 mins then turn out onto a wire rack. Cool slightly.
  • Mix all ingredients for sauce in a pan. Bring to boil and boil for 5 mins and pour over cake while still hot
  • Serve with Whipped cream or Mascarpone with a little orange juice added.
