Blitz all the ingredients together in a blender then leave in the fridge until the grilled pork chops are cooked, press the mixture onto one side of each chop and pop back under the grill for 5 minutes then serve. The above ingredients will do 4 good size chops. Also works well without either the chilli or coriander.

- 1 packet pork scratchings (3oz)
- 1 handful pinenuts (a good handful)
- 1 large cooking apple (peeled and cored)
- 1 chilli (or a small bunch of chopped coriander)
