Soccermole

Introduction

I am almost indecently excited about the kick off of the World Cup, and by way of celebration give you my Soccermole. This, you won't be surprised to learn, is a version of Guacamole, by way of my proudest creation, Roquamole (avocado and blue cheese). Soccermole needs a mere trio of ingredients - avocado, spring onions and, for kick, horseradish sauce - which may sound suspect, but together create something both soothing (the cool, bland balm of the avocado) and uplifting (the feisty fire of the horseradish) which I rather feel will be in order. I like a nervous handful of tortilla chips for dippage, but grissini, sugar snaps and assorted crudités work well too.

  • Very delicious! I've made it today in preparation of the football tomorrow, but I'm not sure there will be any left!
