Introduction

This is one of my favourite salads: superb with salmon; wonderful alone. If you don't have any pumpkin oil, simply replace both pumpkin and groundnut oils with good extra virgin olive oil.

Spinach, Avocado and Pumpkin Seed Salad

Ingredients

Serves: 6

Metric Cups
  • 500 grams baby spinach
  • 75 grams pumpkin seeds
  • 2 avocados
  • 1 teaspoon pumpkin oil
  • 2 tablespoons groundnut oil
  • ½ teaspoon Maldon sea salt flakes
  • zest and juice of 1 lime

Method

  1. Toss together the baby spinach, pumpkin seeds and the scooped flesh of 2 avocados.
  2. Make a dressing of 1 teaspoon pumpkin oil, 2 tablespoons groundnut oil, ½ teaspoon salt, and the zest and juice of 1 lime.

  • I made this salad yesterday and I had a cup of Everythings Rosey tea from Wild Women Tea Club. I just find out that pumpkin seeds are very good for your hormones.

  • I’ve been wanting to make this salad for so long as it’s my favourite ingredients. It was utterly delicious. So fresh & tangy from the lime. I quickly fried the pumpkins seeds in soya sauce to give it a little extra kick. Thank you Nigella, a beautifully clean way of eating fresh spinach. Goes great with spicy food.

  • This is one of the easiest salad recipes I know - so quick to put together. It's so good with smoked salmon. I've always used extra virgin olive oil but I recently found pumpkin oil in a local organic shop, so I might give it a try!

  • Super, Thanks, Just made pumpkin soup yesterday very simple kooking sliced up pumpkin adding half a tomatoboullonblock, some leek, sjalot, garlic and foeli (or nutmake). Turned out very well. I was just wondering what possibly to do with the pumpkin seeds Kind regards
