Basics For A First Home

I am due to get my own first home. I am a big foodie and want to have good quality basics, can you recommend good basics to have? What are your top 5 to 10 items that are good quality must haves that will last.

In her book KITCHEN, Nigella has a section titled "Kitchen Caboodle" which lists some of Nigella's equipment favourites, and the "Gadget Hall Of Shame". However Nigella notes that you shoud always bear in mind how much storage is available in your kitchen, as sometimes storing an item can outweigh the advantage of using it. Avoid having cupboards that are so packed full that you need to pull lots of items out every time you want to find something. Knives are a matter of personal preference but a small vegetable knife and a medium sized knife are good starters and if you want another one then a heavy, relatively short knife. Any knife is easier to use if you can sharpen it regularly. Nigella also likes to use a mezzaluna for chopping nuts and herbs.

Enamelled cast iron cookware can be expensive but lasts an extremely long time if looked after properly and you may find second hand ones on auction websites or in thrift or charity stores. A medium sized casserole (Dutch oven) is a good starting point, with a smaller one or a buffet casserole (known as a braiser in the US) if budget and space allow. A small roasting tin that comfortably fits a chicken, a good non-stick frying pan, plus saucepans of as good a quality as you can afford should be a good start.
