Can you cook the lamb shoulder for the Warm Shredded Lamb Salad with Mint and Pomegranate on an electric grill outside? The grill can be temperature adjusted, but it will be bottom heat only.

Our answer

Nigella's Warm Shredded Lamb Salad With Mint And Pomegranate (from NIGELLA BITES) slow roasts lamb shoulder until it is fork tender. The lamb is shredded and mint leaves and pomegranate seeds are scattered over. We would not advise cooking the lamb directly on an outdoor grill for this dish.

The lamb needs to be in a covered roasting pan as this helps to retain moisture and ensures that the lamb stays succulent as it cooks. Therefore, it would only be possible to cook the lamb on an outdoor electric grill, or even a BBQ, as long as you can set it up for indirect heat and we would suggest using the quicker cooking method (as described in step 4 of the recipe. You need to have more than one heating element so that you can switch off the element directly under the roasting pan but still have an indirect heat source from other burners. Direct heat below the roasting pan could cause the bottom of the lamb to scorch. The lamb may take longer to cook if you keep lifting the lid of the grill, as each time you open the lid it will lower the cooking temperature inside the grill and it takes a while to heat back up again. Please note that we have not tried cooking this dish on an outdoor grill, so are unable to guarantee the results.
