I want to make the Vegan Gingerbread ahead and freeze, but would like to serve it warm with custard as dessert on Xmas eve. What is the best way to reheat and for how long?

Our answer

Nigella's Luscious Vegan Gingerbread (from COOK, EAT, REPEAT) is generously spiced with both fresh and ground ginger. It is squidgy and sticky and enjoyed by both vegans and non-vegans. If you are making the cake ahead, we suggest following the freezing and defrosting instructions in the "Additional Information" box at the end of the recipe.

If you wanted to serve the cake warm then it is probably easiest to warm individual slices in a microwave (about 20-30 seconds at 600W) as the cake can become quite sticky when warm and it is probably easier to decant the pieces into bowls or onto plates while it is cold and then warm it up on the plates. If you need to warm the whole cake then put it, still on its baking parchment, on a baking sheet and in a low (about 120c/100c fan/250F) for 15-20 minutes, until warmed though. Do not reheat the gingerbread more than once.
