What would the proportions and cooking temperature and time be to scale up the Luscious Vegan Gingerbread to a 9x13" traybake?

Nigella's Luscious Vegan Gingerbread (from COOK, EAT, REPEAT) is a squidgy gingerbread cake that is loved by both vegans and non-vegans alike. The cake is baked in a 23cm (9-inch) square cake pan.
To make a larger 23 x 32cm (9x13-inch) version you would need to use 1.5x the original recipe. This is not too difficult given the ingredient quantities. However, the baking is slightly more tricky as the batter is very liquid. We suspect that it would take around 1 hour to 1 hour 10 minutes to bake, but the main problem is that the cake has quite a high proportion of sugar and this could cause the edges to darken and possibly burn slightly with the longer baking time. We would suggest carefully checking the gingerbread after 55 minutes and giving the pan a quarter turn to help with more even baking. If the cake looks like it is becoming too dark on top then you can cover it loosely with a piece of foil. You need to bake the gingerbread until it feels firm on top. We are also not sure if a larger version may sink slightly when it cools, as the lack of eggs gives it a slightly less robust structure. Please note than as we have not tried the larger version ourselves, we are unable to guarantee the results.
