Our answer

Nigella's Spinach With Pinenuts and Sultanas (from FEAST) is good as either a side dish or vegetarian main course. It is made with spinach that is wilted so we suspect that you could use frozen spinach, but make sure that it is frozen leaf spinach and not chopped spinach (or creamed spinach). It may be easiest to thaw the spinach and then squeeze as much liquid out as possible before sautéeing it.

The dish uses white wine for a little extra flavour, though it mostly evaporates during cooking. If you can use alcohol then dry white vermouth would be a good alternative. Otherwise you can just omit the wine.
