Hello, I have made the delicious Birthday Brownies since the publishing of How To Be A Domestic Goddess. Unfortunately one of my four kids is allergic to egg and cannot enjoy these brownies. Do you have a substitute for the eggs in this recipe? I tried many eggless/vegan brownies, but still it tastes not the same and had not the structure of Nigella's birthday brownie.

Nigella's recipe for Brownies (from HOW TO BE A DOMESTIC GODDESS) have a squidgy texture and a rich chocolate flavour. Nigella particularly suggests to pile them up and top with candles, as an alternative to a traditional birthday cake. Unfortunately as the recipe contains a high proportion of eggs (6), it is very difficult to suggest a good replacement.
However, we would suggest maybe trying Nigella's Chocolate Chestnut Refrigerator Cake. This is actually a no-bake cake but is incredibly rich and with a slightly squidgy texture. If it is for children, you could replace the rum with coffee or, if you like chocolate orange flavour, with orange juice (as the recipe introduction mentions). Nigella also has an eggless Dark And Sumptuous Chocolate Cake, which is very popular and, although not quite the same as a brownie, it is also a very moist and rich cake.
