Will the Honey Cake with Dates And Apples work with gluten-free plain flour?
Our answer
Nigella's Honey Cake With Dates And Apples is a damp and squidgy cake that is great at any time of year and also makes a good pudding cake if it is served warm. The cake is made with a combination of plain (all-purpose) flour and ground almonds (almond flour or almond meal).
We suspect that the cake could be made gluten-free, using a gluten-free plain flour made for baking or a gluten-free all-purpose baking blend. In our experience, cakes made with all gluten-free flour can have a slightly close texture and be slightly dry, so we would suggest using half gluten-free flour (125g) and half ground almonds (125g) to try and offset these effects. The baking time and temperature should be the same and the cake is done when the cake is risen, deep brown on top and a cake tester comes out with damp crumbs attached (but not uncooked cake batter). And please bear in mind that as there is no gluten, the cake may be slightly crumbly when you slice it. We would also mention that as we have not tried the cake in gluten-free form, we are unable to guarantee the results.
