The Lasagne Of Love is a great recipe. I need to make it without wine next time. Do I just use extra stock? Add anything else?

Nigella's Lasagne Of Love (from COOK, EAT, REPEAT) is a crowd-pleasing dish that has a rich meat ragù layered between sheets of dried pasta and béchamel sauce and crowned with a layer of gooey mozzarella.
The meat ragù includes a large glass (250ml/1 cup) of red wine or red vermouth. The wine adds a depth of lavour to the sauce and the alcohol cooks out during the long simmering. However, if you do need to avoid using wine then you can replace it with the same amount of beef stock. You could increase the amount of tomato purée (tomato paste) by 1 tablespoon to 5 tablespoons if you have enough in your jar, can or tube, but it is the slow hour long simmering that will really develop the flavour of the sauce.
