Can I Use Different Flours For The Gluten-Free Banana Bread?

Can I make this substituting the rice flour for almond flour or coconut flour? Would all the other ingredients remain the same? Thank you.

Our answer

Nigella's Gluten-Free Banana Bread (from COOK, EAT, REPEAT) is made using a combination of rice flour and ground almonds (almond meal). This combination gives a good texture and makes a moist banana bread. The rice flour could be switched for a plain gluten-free flour blend (all-purpose gluten-free baking mix).

Unfortunately we would not recommend using coconut flour or extra ground almonds (almond flour or almond meal) instead of the rice flour. Coconut flour absorbs a lot of liquid and you need to make quite a few adjustments to a recipe to be able to use coconut flour successfully. Extra ground almonds (or other ground nuts) will make the banana bread too oily as the almonds will let out oil as the banana bread bakes and without the rice flour to absorb the oil, you will likely end up with a pool of oil in the bottom of the loaf pan. Rice flour can be found in many supermarkets and also in natural food stores and on line.
