Devil's Food Cake Using One Tin

Hello. I want to make a Devil's Food Cake, from Nigella Kitchen, but only have one tin. Could I bake it and than cut the cake in half after it's done? Or it wouldn't bake properly? Thank you!

Our answer

Nigella's Devil's Food Cake (from KITCHEN) is a rich chocolate cake that is baked in two layers. The cake batter is quite runny, as this gives a very moist chocolate sponge. So the baking time for the layers is about 30 minutes, which is slightly longer than for a Victoria-style sponge.

It is possible to bake the cake in one deep tin but there are some practical concerns. First as the batter is on the liquid side it can be tricky to bake in a springform pan as the batter can seep out of the bottom if the pan does not seal very tightly. Second the baking time will be quite long (probably 50 minutes to 1 hour) and you may need to reduce the oven temperature slightly to make sure that the top of the cake does not burn while the centre is still cooking. Unfortunately as we have not tried the cake in a single tin we regret that are unable to give definite advice on the baking time and temperature.
