Easter Egg Nest Cupcakes

Is the Easter Egg Nest Cake a good candidate for cupcakes? Are there any changes I should make if I were to try this? Suggested bake time?

Our answer

Nigella's Easter Egg Nest Cake (from FEAST) is a flourless cake and is similar to a chocolate souffle mixture as it is made from eggs, sugar and melted chocolate. It should be possible to bake the mixture in smaller cupcake size, but you must bear in mind that this is not a sponge cake as it has a moist, slightly moussey texture. So the centres will sink quite dramatically as the cakes cool. The centres can be filled with whipped cream before topping with eggs and serving, but they will be more like a dessert than a cake.

You would need to bake the mixture in paper or foil cupcake cases and we would estimate that the mixture will make between18 and 24 cupcakes. Fill each paper case no more than 3/4 full with the mixture. Bake at 180c/350F for 15 to 20 minutes, until the cakes have risen, are dry on top and a cake tester inserted into the centre comes out with some damp crumbs on (but not uncooked batter).
