Eggs In Banana Muffins

Full question

I have just used the Banana Muffins recipe in How To Be A Domestic Goddess. I noticed while making them that there are no eggs or liquid as such and the 'sludge' that Nigella refers to, that I was meant to have when the ingredients are lightly mixed, was rather dry. Should there be eggs? My end result is ok but they don't seem quite right. Thank you.

Nigella's recipe for Banana Muffins (from HOW TO BE A DOMESTIC GODDESS) is an egg-free recipe. Bananas do have some leavening properties and so sometimes are used as a replacement for eggs in baking. The muffins will be slightly different in texture and more substantial than those made with eggs and other liquids.

The bananas should be very ripe so that they mash very easily, almost into a puree. They should also be large bananas, so if your bananas are on the small side you may prefer to use 2 1/2 or 3 bananas so that the batter is not dry. You might also like to try Nigella's Chocolate Banana Muffins or Banana Butterscotch Muffins, both of which are slightly more spongy in texture but still easy to make.
