Nigella's Chicken Traybake With Bitter Orange And Fennel (from SIMPLY NIGELLA) is a one-pan dish that cooks citrus marinated chicken on a bed of sliced fennel. The fennel softens and sweetens in the heat of the oven and the marinade helps to flavour and tenderise the chicken. Leftovers can be stored in the fridge for up to 3 days and are best served cold.

It is possible to freeze leftovers, though we would not recommend making this dish ahead and reheating it. Put the chicken and fennel in an airtight container as soon as it is cool (within 2 hours of cooking) and freeze for up to 3 months. Defrost thoroughly overnight in the fridge and eat cold.
