Can I substitute a gluten-free flour for the plain flour in Nigella's recipe for Luscious Vegan Gingerbread?
In COOK, EAT, REPEAT Nigella did try as far as possible to offer gluten-free and vegan options for baking recipes. But to be included she felt that these options had to be as good as the original. We did make the Luscious Vegan Gingerbread with gluten-free flour but unfortunately the cake sunk in the centre and had a very dense texture due to the lack of both eggs and gluten. So sadly we can't recommend using gluten-free flour for the cake. The book does, however, include a gluten-free and vegan lemon polenta cake and also chocolate chip cookies.
