Please can I ask what alternative I could use instead of butter to make the Mint Cookies dairy-free? I would love to make these as a gift for a dinner party I'm going to.

Our answer

Nigella's Chocolate Mint Cookies (from NIGELLA EXPRESS) are chocolate chip cookies that are glazed with a chocolate mint glace icing. They are perfect with coffee after dinner, as an alternative to chocolates.

Only the cookie dough contains butter and in this instance we suspect that the butter could be replaced with a dairy-free margarine. Please check the labelling on the margarine as not all margarines are dairy-free and try, if possible, to use a hard margarine with a fat content of approximately 80%, as softer margarines with lower fat contents could give a slightly different texture. However, we would mention that butter adds quite a lot of flavour and sometimes baked goods with margarine can taste slightly flat in comparison. We would also suggest Nigella's Dark And Sumptuous Chocolate Cake as a delicious dairy-free (and vegan) option.
