Nigella's Dark And Sumptuous Chocolate Cake (from SIMPLY NIGELLA) is a chocolate sponge with a ganache-style chocolate frosting. Although the cake is vegan and dairy free it keeps as well as a regular sponge cake.

The cake does not need to be refrigerated and can be stored at room temperature under a cake dome or in an airtight container for up to 5 days. If you want to make the cake further in advace then you can bake and cool the sponge layers and then freeze them, wrapped in a double layer of clingfilm (plastic wrap) and a layer of foil, for up to 3 months. To thaw, unwrap the sponge layers and leave on a wire rack or a plate at room temperature for 3-4 hours. Fill and ice the cake once it has fully defrosted.
