What type of chillies do you use for Jumbo Chilli Sauce? I have some Carolina Reapers but think they may be to hot for this!

Nigella's Jumbo Chilli Sauce (from KITCHEN) is a lively combination of roasted red peppers, fresh chillies, coriander and lime. It can be used as a condiment or a dip and goes well with most roasted meat and fish or anything that needs a little extra kick.
Generally when we suggest red chillies we would use the long red chillies that are sold in UK supermarkets (known as Holland Red or Dutch Red chillies). They have a medium heat level (5,000 - 10,000 Scoville Heat Units) and are similar in heat levels to a red jalapeno. However, you can use slightly hotter chillies if you wish. Carolina Reapers have a level of 1 - 2.3 million Scoville Heat Units, and are some of the hottest chillies available. We feel that they would likely make the sauce too hot to eat for most people, particulatly if you use 3 of these chillies. You may want to add a very small amount of the Carolina Reaper to the sauce, maybe alongside a much milder chilli, but it would be best to add a very tiny amount first and then taste the sauce, before adding any more. Keep adding in tiny amounts until you get to the heat level that you prefer.
