White and Dark Chocolate Mousse

Full question

I have made the Instant Chocolate Mousse and it's delicious. However I have tried making a white chocolate mousse using the same method and have had no success with it. I would like to make a white and dark chocolate layered mousse, but using as close to the dark chocolate recipe so white and dark are of the same texture. Please can you help, thank you.

Our answer

Nigella's Instanr Chocolate Mousse (from Nigella Express and on the Nigella website) uses a combination of melted dark chocolate, melted marshmallows and cream. The mousse sets thanks to the combination of the gelatine in the marshmallows and the dark chocolate. Unfortunately white and dark chocolate are completely different as dark chocolate contains mostly cocoa solids whereas white chocolate is only cocoa butter and other fats (some argue that it should not be called chocolate at all!).

This means that they have very different qualities and white chocolate does not set in the same manner as dark chocolate. You would have to change the ratios of ingredients quite a bit and unfortunately we have not tested this. You could however try looking at Nigella's White Chocolate Mint Mousse recipe in Nigella Express. We suspect that this may possibly be adapted to make a dark and white version of mousse (leaving out the mint flavouring). However you would probably need to use less dark chocolate in the mixture - we would guess at 150-200g - to get a similar texture in both mousses. We would also mention that we have not tried these side by side so we regret that we cannot guarantee the result.
