Why Was The Glaze For My Chocolate Cheesecake So Thick?

Full question

Delicious Chocolate Cheesecake - not too rich either. However, the glaze failed me for some reason. I followed instructions and it was a lot thicker than the one in the image and ended up looking like a car crash!

Nigella's Chocolate Cheesecake (from FEAST) is a baked chocolate cheesecake that is accompanied by a ganache-style chocolate sauce. The sauce should be fairly easy to drizzle over the cheesecake as the ratio of chocolate to cream is not that high.

If the sauce is too thick (and possibly looks slightly lumpy or oily) then it is likely that the sauce was over heated. This will cause the chocolate to seize and can make the sauce look thick and grainy and as you stir it may also start to look oily. Sometimes stirring in a little extra cold cream can re-emuslify it, it depends how hot the mixture has become. To prevent this happening again, heat the sauce ingredients very gently over the lowest possible heat, keeping an eye on the pan at all times. Remove the pan from the heat while there are still pieces of unmelted chocolate visible, as they will continue to melt in the residual heat of the pan and can help to reduce the risk of the sauce seizing again.
