  • Lightly grease a baking tin 15 x 25.5 cm or 6 x 10 in. or a round 9 inch (23 cm) springform tin. Pre-heat oven to gas mark 6, 400 F or 200 C.
  • Halve the plums and stone them. Cut them into thin slices, place them in a bowl and toss them around with the cinnamon.
  • Mix the flour, salt and oats together in a mixing bowl.
  • Melt the butter and sugar together over a gentle heat.
  • Mix these together with the flour and oat mixture, starting with a spoon and finishing with your hands until you have a lump of dough.
  • Halve the dough and press one half into the baking tin, pressing it firmly all over the base with your hands. Scatter the plums evenly over the surface, then top with the remaining oat mixture, pressing down firmly.
  • Bake on the centre shelf of the oven for 25-30 minutes. Allow to cool for about 10 minutes before marking into squares or slices. Unless you want to serve them warm, allow them to cool completely in the tin.

    • Made these with rhubarb instead of plums, didn't add any extra sugar, and they were absolutely delicious.
